Crust Ingredients
- 1 ½ cups almond flour
- ¼ cup of chickpea flour/ or flax flour
- 1 scoop of TrueFit Cinnamon Churro protein
- 1 egg
- 2 tbsp cold grass-fed ghee
- ¼ cup swerve, granulated/ or sweetener of choice
- Pinch of cinnamon
- Ice water (as needed)
Filling Ingredients
- ¼ cup pecans, chopped
- 2 tsp cinnamon
- ½ tsp nutmeg
- 3 tbsp stevia, granulated/ or sweetener of choice
- 1 apple, chopped
- 2 tbsp water
- 1 tbsp grass-fed ghee
- Honey (for garnish)
Crust Instructions
- Add all dry ingredients into a food processor, pulse to combine
- Add in the cold ghee to the dry ingredients
- Pulse until you get a bread crumb like consistency
- Add In the egg and pulse
- If the mix is too dry you can now drizzle in the iced cold water until a dough is formed
- Wrap in plastic wrap and place in a refrigerator for an hour
Filling Instructions
- In a sauté pan, heat up half your ghee
- Add in the pecans and allow them to toast
- Add in half the cinnamon, set aside
- In the same sauté pan, heat up the remaining ghee
- Add in the chopped apple, sweetener and spices
- Once turned golden brown, add the water and let the apple cook down
Assembly Instructions
- Cut the crust in roughly 20-24 piece and form into a ball
- Roll out each ball to an even flat circle
- Press the dough into a mini muffin tin
- Bake at 350 degrees for 5 min
- Remove from oven and add in the apple mixer
- Top with pecans and place back into the oven for an additional 10-12 min
- Let cool and then drizzle with honey
