Keto TrueFit Carrot Cake with Cream Cheese Frosting
Ingredients
Cake
- 1 scoop TrueFit Cinnamon Churro Grassfed Protein
- ¾ cup coconut oil
- 1 tsp vanilla
- 2 large eggs
- ½ cup egg whites
- 2 ½ cups almond flour
- 2 tsp baking powder
- 2 tsp pumpkin pie spice
- 1 tsp cinnamon
- 2 ½ cups carrots
- ½ cup chopped walnuts
- ½ tsp salt
- ¼ cup raw stevia + monk fruit blend (or sweetener of choice)
Frosting
- 1 stick of softened grass fed butter
- 8 ounces of softened cream cheese
- 2/3 cup powdered monk fruit (or to taste)
- 1 scoop TrueFit Vanilla GrassFed Protein
- 1 tsp vanilla
Directions
- Beat eggs with coconut oil, sweetener, and vanilla.
- Add in all dry ingredients and fold together until combined.
- Add in carrots and walnuts.
- Preheat oven to 350 degrees F
- Grease a cake pan and pour in cake batter. Bake at 350 F for 45 min or until a tooth pick come out clean from the center of the cake.
- In a medium bowl, cream the butter and cream cheese until it combines smoothly.
- Add in the vanilla and then the sweetener slowly until fully incorporated
- Allow the cake to cool fully before assembling.
Keto Peanut Butter Chocolate Bars
Ingredients
Filling
- 1 cup smooth natural peanut butter
- ¾ cup almond flour
- ¼ cup raw stevia or monk fruit powder
- Pinch salt
- 1 tsp vanilla
Coating
- 2 ½ cups stevia sweetened chocolate chips
- 2 tbsp butter
- 1 tsp sea salt
Directions
- In a medium bowl combine the filling ingredients and stir until well combined and smooth.
- Line a baking pan with parchment paper and grease with cooking spray, pour the filling into the pan and place in the freezer for 1-2 hours
- Combine chocolate chips, sea salt and butter in a medium bowl- microwave these ingredients stirring every 30 seconds until smooth
- Remove peanut butter from the freezer and cut into 1” by 3” rectangles
- Dip the frozen peanut butter mixture into the chocolate until fully coated
- Place on a cooling rack with a baking sheet underneath and freeze for an additional 30 minutes
Keto Coconut Blondies
Ingredients
- 3 cups unsweetened shredded coconut flakes
- 6 tbsp room temp coconut oil
- 4 tbsp grass fed butter
- 2 eggs
- ¼ cup almond flour
- ¼ tsp baking powder
- ¼ cup walnuts
- ½ cup stevia sweetened (80%) dark chocolate chips
- 1 cup pecans
- ½ cup stevia blend (stevia + monk fruit)
Directions
- Preheat oven to 350 degrees
- In a medium size bowl, combine the coconut oil, butter, and eggs with the stevia blend. Whisk until fully combined.
- In a separate bowl combine the remainder of the ingredients.
- Add the liquid mixture into the dry and combine.
- Pour the mixture into a prepared pan and bake for 20-25 min or until a tooth pick comes out clean from the center
- Remove from the oven and allow to cool completely before cutting into squares
