TrueFit Apple Pecan Bites

Crust Ingredients

  • 1 ½ cups almond flour 
  • ¼ cup of chickpea flour/ or flax flour 
  • 1 scoop of TrueFit Cinnamon Churro protein
  • 1 egg
  • 2 tbsp cold grass-fed ghee
  • ¼ cup swerve, granulated/ or sweetener of choice
  • Pinch of cinnamon
  • Ice water (as needed)

    Filling Ingredients

    • ¼ cup pecans, chopped
    • 2 tsp cinnamon
    • ½ tsp nutmeg
    • 3 tbsp stevia, granulated/ or sweetener of choice
    • 1 apple, chopped
    • 2 tbsp water
    • 1 tbsp grass-fed ghee
    • Honey (for garnish)

     

    Crust Instructions

    1. Add all dry ingredients into a food processor, pulse to combine
    2. Add in the cold ghee to the dry ingredients
    3. Pulse until you get a bread crumb like consistency
    4. Add In the egg and pulse
    5. If the mix is too dry you can now drizzle in the iced cold water until a dough is formed
    6. Wrap in plastic wrap and place in a refrigerator for an hour

    Filling Instructions

    1. In a sauté pan, heat up half your ghee
    2. Add in the pecans and allow them to toast
    3. Add in half the cinnamon, set aside
    4. In the same sauté pan, heat up the remaining ghee
    5. Add in the chopped apple, sweetener and spices
    6. Once turned golden brown, add the water and let the apple cook down

    Assembly Instructions

    1. Cut the crust in roughly 20-24 piece and form into a ball
    2. Roll out each ball to an even flat circle
    3. Press the dough into a mini muffin tin
    4. Bake at 350 degrees for 5 min
    5. Remove from oven and add in the apple mixer
    6. Top with pecans and place back into the oven for an additional 10-12 min
    7. Let cool and then drizzle with honey
