Need to boost your protein intake? These protein pancakes can be enjoyed as a healthy breakfast, post workout snack, or anytime you're craving a delicious fall-inspired sweet treat.

 

For this recipe we used our RSP TrueFit Vanilla Grass Fed Whey Protein. With just 1 scoop of TrueFit, you get 25g of grass-fed protein, 12 organic non-GMO fruits and vegetables, 8g of prebiotic fiber and probiotics.

 

Ingredients:

 

-3/4 c oat flour

-1 scoop RSP TrueFit Vanilla Grass Fed Whey Protein Powder

-1 tsp baking powder

-1 tsp cinnamon 

-1 tsp vanilla 

-2 egg whites (1/3 cup)

-1 tbs coconut sugar

-1/3 c water or milk of choice 

 

Apple topping:

 

-1 Granny Smith Apple, diced

-1 tbs butter 

-1 tbs coconut sugar

-1 tsp cinnamon

 

Other:

-2 tbs chopped pecans

-sugar free maple syrup of choice

 

Directions:

 

1) Mix together oat flour, protein powder, baking powder and cinnamon.


2) Beat egg whites until foamy and add sugar, vanilla, and water or milk.


3) Add egg mixture to dry ingredients.


4) Pour 1/4c batter onto preheated griddle and cook until the center is bubbling or outer edges begin to dry, then flip and cook for another 20-30 seconds on the other side.

 

5) Add diced apple, butter, sugar, and cinnamon to small saucepan over med high heat for 3-6 mins

 

6) Top your pancakes with apple mixture, sprinkle with chopped pecans, and drizzle with your favorite syrup.
